Hi, I'm Dr.. Neal Barnard, and I want to talk about foods and health there is so much confusion out there about
what are the healthy foods to eat and
What I really think is the most important is to rely on what I'm going to call a new understanding
Of what makes us sick

Start with high blood pressure you go to the doctor or the [doctor] says, your blood pressure's a little bit up
Here's a prescription and so you go to the drugstore and fill it wait wait wait wait stop

How did my blood [pressure] get high the old approach was
It's essential hypertension. We don't know what caused it. drugs will help you. Here's the new approach
We now know, that the foods you eat change
Viscosity guys you know what I'm talking about the motor-oil has different viscosity [in] your engine. It's the thickness of it
Well you have thickness in your blood your blood can be viscous or it can be thinner
Viscous is like oil thin is like water you want your blood to flow like water
So what if I'm eating cheese fat and chicken fat and lard?
The viscosity in my blood goes up, it raises my blood pressure
And I end up on pills. So, the new understanding of what causes the problem
Shows us the answer the answer might be pills
But it might be taking the fatty greasy foods out of my diet reducing viscosity
Okay, example 2. You go to the doctor the doctor says you've got diabetes. Here's your prescription go to the drugstore. Stop.
There's a new understanding of diabetes
Researchers at Yale University found that particles of fat are building up inside
The muscle cells the muscle cells of the body and the reason that matters is that's where blood sugar
Is trying to go it's trying to get into the muscle cell to power your movements.
but if particles of fat build up in the cells,
they stop insulin from being able to get the sugar in, and the sugar ends up in your blood, and you end up with a
prescription for a drug
What's the answer?
The answer is the diet change very much like the one that I was just talking about for your blood pressure.
We keep the fat out of the diet
Then it drains out of the muscle cells and now the sugar can get in and the doctor says your diabetes is a whole lot
better.
so
Third example. Heart disease. More than two decades ago, we found that it can actually be
reversed. What I mean is the arteries can open up again
And what all these things have in common, blood pressure, diabetes, and heart disease
Is the same kind of diet changes helped them all and the ideal is a plant-based diet
You've heard people use that v word and you know what? It's true. A vegan diet means no animal products at all
But go further, keep the extra oils low.
Don't be greasing up all your foods and third
Whatever is left
If you're adding vegetables and fruits and whole grains and beans pick the healthiest one not a lot of junk food okay, so plant-based diet
and not so greesy, keep the oils low. Pick the healthiest of what's there and
Translate that into a beautiful Italian meal where they're serving some angel Hair pasta
With a spicy tomato sauce and beautiful vegetables on the side. Or maybe it's a Latin American one with a bean burrito
And lots of beautiful fruits and vegetables maybe you're doing Japanese
Not fish sushi. Make mine cucumber sushi or asparagus soushi. Live it up
Have fun with it and your body will take it from there. Very simple, but it really pays off.
