How to make Ramen noodle♪
Make much hydrated ramen noodle.(hydrated rate is about 40 %)
Measure.
100.0 g of water.
Put salt and baking soda into water and dissolve.
Gradually add the baking soda solution to the flour mixture and mix well.
Knead the dough and form a ball.
The dough turn a light yellow by baking soda.
Put it in a plastic bag and let it sit for 20 minutes.
Once the time has passed, take out the dough.
Put the dough into thick plastic bag.
I recommend vacuum storage bag for clothes.
Step on it to knead.
Fold the dough.
Repeat this step 3 times.
Disinfect your working surface with alcohol.
Knead the dough lightly and form a ball.
Put it in a plastic bag and let it sit for 40 minutes.

Divide it into 3 equal pieces.
Use a rolling pin to spread out the dough to 3mm thick.
Pasta machine.
Powered by a motor.
Set the motor to drive the roller.
If you don't have pasta machine.
Off course, you can make ramen noodle with a rolling pin.
Switch on!
Set the rollers to the largest setting. (Dial 0)
Chang the settings on your roller to roll the dough thinner and thinner.
Repeat it.
Set the rollers to the largest setting again. (Dial 0)
Fold the tip of dough and roll it.
Fold the another side of dough and make it rectangle.(You can skip this step)
Roll the dough thinner and thinner.
The thickness of dough is about 1.5 mm at dial 4.
Dust some potato starch onto both side of dough.
Set the motor to drive the cutter.
In this pasta machine, cutters with 1.5 mm width and 6.5 mm width are standard equipment.
Rotate the motor reversely.
You can't return the noodle to the dough.
1.5 mm straight ramen noodle is done.
You can make curly noodle by rubbing it well.
Put paper towel on a tray and put noodles.
Put a paper towel over the noodle.
Let sit in the refrigerator for 2 days.
This step gives ramen noodle springy texture.
Clean the pasta machine.
Keep the pasta machine dry!
Use brush or bamboo skewer for cleaning the pasta machine.
Remove the cutter and clean back side with care.
After 2 days.
①Make steam noodle for Yakisoba.
Spread some oil onto the steaming basket called Seiro.
Put the curly noodle on the Seiro in a doughnut shape.
Off course, you can make this by store-bought raw noodle.
Steam for 5~6 minutes.(If your noodle is thick, steam for 8~10 minutes)
Boil for 30 seconds.((If your noodle is thick, boil it for about 1 minute))
Rinse with running water.
Drain well and sprinkle some salt.
Pour some sesame oil.
Mix lightly and Yakisoba noodle is done.
②Make fried noodle for Katayaki-soba.
Put raw noodle into 170℃(338F) oil.
Deep fry for about 15 seconds.
Off course, you can make this by store-bought raw noodle.
If you use Yakisoba noodle, the texture is more crispy and crunchy.
Turn it over and deep fry for about 15 seconds again.
Take out onto the strainer and drain oil well.
Fried noodle for Katayakisoba is done.
Very crispy!
