mustard seeds

gud or jaggery broken into small pieces or grated
salt
chopped green chillies
grated ginger
curry leaves
fresh green coriander

Let's chop up the eggplant
You can chop up the eggplant
into large large chunky pieces
Or smaller pieces
Now it's time to fry them
Heat some oil in a pan
The oil should be nice and hot
They're starting to get some color
Take them out
and drain on absorbent paper
Fry all the pieces
Remember to keep the oil really hot,
otherwise their eggplant tends to soak up the oil
Heat some oil in a pan
Add in the mustard seeds
and the cumin seeds
Add in the curry leaves
Add in the asafoetida
Followed by the tomato paste
cover it and let it settle down
Cook it for a minute or two
This has been cooking for two minutes now
Lower the heat for sometime
Add in the ginger
and the green chilies
and the dry spices
Mix well
Raise the heat slightly
cook stirring
continuously
Till the oil starts separating
This is after another three minutes
The oil has started separating from the masala,
so now it's time to add in the eggplants
Coat all the pieces in the masala,
and cook for about two minutes now,
season it with salt
It already looks so nice and rich,
it's just been about 1 and a half minutes
time to add in some water
The curry is already done,
but we need to bring it all together
That's why we have added the water,
let's add in the jaggery or gud
Just cover it for a minute
so that all the flavors are well blended together
That looks beautiful
Switch off the heat,
And that's ready to plate
Tangy eggplant and tomato curry is ready
sprinkle some coriander leaves on top
Serve it hot with rice or any bread
