I wanna create a series called "My Life in the US"
I will finish studying in the US in about 1-2 years
and maybe I will return to Vietnam
so I want to vlog my daily life
in order to share with you guys
and also to keep the memories
Today I stay home alone
and I wanna cook something tasty
Today recipe is pasta with creamy mushroom
I didn't create this recipe
I saw it on one of my fav youtuber's channel
She was cooking this and now I'm craving for it lol
I want it so bad that's why I'm gonna make it today
I just got back from the supermarket
I will show you what did I got at the supermarket!
I got everything I need for this recipe
Except for...
where is it
Except for garlic
I already had this at home
For this recipe we need pasta
This is a pasta called rigatoni
this type of pasta is kinda big and thick
because this is creamy mushroom pasta
so we need mushroom!
I enjoy making food from scratch
instead of buying reserved pre-made food
so I got mushroom for the sauce
I only make 2 servings
so I think one box is enough
I just got 2 boxes to make sure
This is sausage
which is made from ground pork
garlic
This is Italian parsley
the smell is milder than US parsley
You can have this recipe with parmesan cheese
Parmesan cheese is the common cheese
which you always eat with pasta
But I like this cheese more
I tried this cheese at The Spaghetti Factory
and I love this type of cheese so much
so I got this cheese instead
The Korean youtuber I was talking about
her name is Sydney

In this recipe she used single cream
They only has single cream in England
and not in the US
So I got whipping cream to substitute
But I just googled
and whipping cream cannot substitute single cream lol
So I will use milk instead
and butter too
This milk is so good
I got it from Safeway
the bottle is super heavy
On top it has a layer of "whey" (??)
it's fresh milk
super good!
These are all the things that we are gonna need today
Looks like a lot but it's very simple

olive oil!
Let's get cooking!
First thing first
I am boiling the water to cook the pasta
I think this type of pasta need 15 mins to be cooked

I have this tiny Ninja blender
I will put the blade in first
because this blender is kinda small
so I will put little by little
I will break the mushroom apart so it's easy to blend
This is kinda full already
I will put some olive oil in
so it can blend smoothly
if you put water the sauce will be too watery
There is no exact amount
just measuring with your eyes
about 1-2 tbsps
not too watery

I'm cooking this pasta now
the water has boiled
I will put some salt
so the pasta is not too bland
and some olive oil
so the pasta won't stick together
This box didn't show how many servings
so I will use about half of this box
and stir a little
so it won't stick to the pot

I read somewhere that when you cook pasta
depend on the time showed on the box
you should cook 1-2 mins longer
so the pasta will be softer and tastier
I will wait about 15 mins and then try the pasta
and maybe cook 1-2 mins more

Poha Chivda Recipe
Ingredients
Flattened Rice or Poha or Atukulu - 1/2 kg
Fried groundnuts - 100 grams
Dry coconut pieces - 2 tablespoons
Cashew nuts - 2 tablespoons
Sugar - 1 teaspoon
Fried bengal gram - 2 tablespoons
Citric acid - pinch(optional)
Turmeric powder - 2 teaspoons
Onions - 1
Curry leaves - 3 bunches
Green chilli - 3 and Red chilli - 5
Salt - tasty
Oil - 3 tablespoons
Fried corn flakes - 3 tablespoons
Method
Cut onions into pieces
Cut green chilli
Break Red chilli
Keep ready curry leaves
Heat thick bottomed kadai
Heat oil
Fry poha for 5 to 10 minutes
Keep the flame low and stir occasionally until they turn light golden colour
Fry until crispy
Switch off and keep the poha a side
Add oil
Fry already fried groundnuts
Fry for 2 minutes
Fry dry coconut on very low flame till slight colour change
Soak dry coconut for 10 minutes and cut like this long thin slices
Don't burn
Fry Cashew nuts
Take out
Fry Bengal gram for 1 minute
Fry onion for 10 minutes until brown and crispy
Fry Green chilli
Add curry leaves and fry until crispy
Fry Red dry Chilli
Add turmeric
Add sugar and fry for 2 minutes
Add fried ingredients
Mix well
Add salt
Add citric acid or 3 drops of lemon juice (optional)
Add extra turmeric powder if you want more colour
Add in a bowl
Add fried corn flakes and mix them
Mix like this
Preserve in air tight Box
Good for 2 months
Poha chivda is ready to taste
