Hello foodies I am your new foodie fried Riddhi Kamani.
Today we are going to make multi layer sooji halwa, this is very simple very well known
and a traditional gujarati sweet dish but we are going to present it in a modern way
so let's see the ingredients.
One cup semolina, one cup vermicelli, five tablespoon sugar, five tablespoon clarified
butter, half cup of milk, one cup of water.
Desiccated coconut, cashew nuts and almonds for garnishing purpose and food colours.
So let's start the recipe, put one pan on heat add three tablespoon of clarified butter.
Let it melt.
Now add one cup of semolina and saute it until its get golden brown.
So friends you can see it's get nice golden colour now add three cups of hot bubbling
water into it.
Give it a gentle stir.
Continuously stir the mixture we can have this kind of lumpy texture.
Now add five tablespoon of sugar.
And mix it well you can add sugar free also if you want sugar free semolina.
Cook it for two to three minutes.
You can see all the sugar gets melt.
So your first mixture of semolina is ready.
Now take this mixture into one bowl and keep it aside.
Let's make another mixture.
Again put three tablespoon of clarified butter in the same pan and let it melt.
Now add one cup of vermicelli into this melted clarified butter.
Saute it until its get golden brown.
Now you can see we have nice golden colour add three cup of hot bubbling water into this
mixture and mix it well.
Now add five tablespoon of sugar into this mixture or you can add sugar free also.
Again mix it well and cook it for two to three minutes so you can see all the sugar is melting
and we have thick lumpy texture this our desire consistency take it into one bowl.
So friends here comes the interesting part of this recipe.
We have one mixture of semolina and one mixture of vermicelli.
First take mixture of semolina divide this mixture into two equal parts.
Right now I have two food colours one is rose pink and another one is green food colour
add two to three drops of pink colour and mix it well.
You can get very nice light pink colour mixture you have to mix it very well.
Now take remaining part of semolina mixture simply add another food colour to this mixture.
Right now we are adding orange colour again mix it well.
Now add the mixture of vermicelli into one bowl
and add another food colour into this.
We are adding green food colour into this mixture
now mix it well.
Now you can see the magic we have very colourful mixtures.
Now let's start plating we have cashew nuts, almonds and desiccated coconut for garnishing
if you want you can add chopped dry fruits into this mixture also.
Put one whole cashew nut in the middle of the bowl.
Now slowly add one colour of mixture.
And make one even layer lightly press it down and make sure you have covered one third part
of bowl.
Now take another layer and repeat the procedure press it gently again you have to make even
layer so that we can see all the colours.
You have to make even surface make sure you have covered two third part of bowl.
Now again repeat the procedure.
Press it gently and make even layer.
Now take the serving plate and put your plate like this in the middle of the plate.
Now hold your bowl like this and gently tap on the top of the surface slowly take your
bowl and you can see the nice layer of colours.
Now we are garnishing it with almonds and cashew nuts.
