turmeric powder

coriander powder red chilli powder

garam masala salt and a pinch of hing grated ginger

chopped green chilies and some vegetable oil for cooking finely chopped onion

moong dal or

split green gram

That has been soaked in water for 2 to 3 hours

boiled peas

cauliflower and fresh green coriander

Drain the water from the lentil and put it in a mixie jar

And grind it coarsely

to prepare the cauliflower

Remove the leaves

I have washed it thoroughly

There are 2 ways of doing it

either you chop it very finely,

or you could use a grater

We are there almost

Make sure to grate only the flowers

and this is what we will throw away

This is what we get

boil some water in a saucepan

and switch off the heat

Add the grated cauliflower or gobi

into this water

Mix it well

and strain it

Keep this aside

and let it drain

heat some oil in a pan

and add in some cumin seeds

We will just add a pinch of hing/asafoetida to the oil

Lower the heat

Add in some coriander powder

some turmeric powder

and some red chilli powder

Give it a mix and

Add in

The lentil paste or the moong dal paste

Season it with salt

Cook this on low heat

this is already getting the bhurji texture

... this looks done

Just switch off the heat

Take it out in a bowl

Keep it aside

add some oil to the same pan

add in some cumin seeds to flavor the oil

Add in the onion

And we'll cook it on a medium heat

till the onions are slightly Brown

The onions are done,

so let's add the green chillies

ginger

Coriander powder

turmeric powder

cumin powder

red chilli powder

Squeeze out the excess water

from the cauliflower

and just add it to the pan

Season it with salt

Add in the peas

I'm cooking this on medium heat now

Add in some garam masala

The cauliflower has released some water,

so we will just keep cooking

Till the water has dried up

The Cauliflower is cooked now

Let's combine the lentils

Combine the two thoroughly

So that the flavors are married together,

I'll add in some green coriander now

This smells good

started to look like a bhurji

Garam masala powder

Chopped coriander

The bhurji is ready,

let's plate it up

Sprinkle some coriander on top and serve it hot
