Today's recipe on Sara cooks for you is Dynamite Shrimps. This is my family's
all-time favorite go-to recipe when it comes to shrimps and it's really easy
and very simple to make. For this I have used about half a Kg of shrimps, which I
have cleaned and de-veined, and I'm going to soak it in buttermilk. I have taken
about one cup of buttermilk let's give it a stir and now I'm going
to add in the shrimps. Let's soak this for about two hours, you can use buttermilk
enough to soak the shrimps, and for the batter I've used about three and a half
tablespoons of corn flour and maida or all-purpose flour about two and a half
tablespoons,
garlic powder about 3/4 teaspoon, pepper powder 3/4 teaspoon, red chili
powder half a teaspoon and white pepper powder I'm adding it, it's optional you
can avoid it if you don't want to about 1/4 teaspoon, and cooking soda about
1/8 teaspoon and a little salt to taste not too much just a little bit and I'm
going to mix this well and I've taken about 1/2 cup of water, add little by
little and mix it well the batter should not be very thin otherwise it's not
going to coat the shrimps neither should it be very thick. Let's mix it up nicely
there shouldn't be any lumps in it and now for the secret sauce I've used
mayonnaise which is about three tablespoons, Sriracha sauce two
tablespoons, chili garlic sauce 2 tablespoons, honey 1 tsp, white pepper
powder, black pepper powder and sesame seed oil 1 TSP, let's mix them all
together in a bowl I'm going to first add in the mayonnaise.
The rich taste and the flavor mainly comes from this Mayo so you can add
three tablespoons also according to your taste you can adjust it and I'm adding
in the chili garlic and the Sriracha sauce. if you don't find the Sriracha
sauce you can use hot sauce two tablespoons instead of that. White pepper
also is optional if you don't have it you can just add the black
pepper and increase it a little bit and the sesame seed oil and honey this
adds a little sweetness to the sauce so let's mix this well till everything
incorporates nicely
and if you like it a little spicy you can add about 1/2 teaspoon of chili
powder or paprika powder let's mix this as well. Now the sauce is ready I am
going to move in to start frying the shrimps now. They are also soaked in the
buttermilk just testing this first to see if the oil is hot enough and the
batter is holding on well, so this is the consistency of the batter I am just
dipping them in the batter and dropping each one slowly into the oil. Make sure
the oil is not really very hot but hot enough for the shrimps to fry, because if
it's too cold then the batter will come off the shrimps so that's the reason I
tested it first.
fry them on a medium flame
Turn them in between and let them fry to a nice golden-brown color and now
we'll transfer them onto a plate, I am putting them on a kitchen towel so that
the excess oil comes off. This takes about four to five minutes for them to
fry on a medium flame. I've added the next batch as well so
these are also ready and I am just gonna transfer them to a serving plate
now that the shrimps are fried and ready and they're really crispy
I'm going to add these to the sauce that we just prepared. So the sauce is a
little more you don't need so much of sauce it depends on how you like it I am
just removing some of the sauce which can be used as a dipping sauce along
with the shrimps and I'm going to add in the fried shrimps to this sauce
add them to the sauce and toss them nicely with the sauce so that they coat
the shrimps evenly, if you like to have more sauce you can add some
more and let's transfer them to a serving dish I've used a glass and just
put a cabbage leaf or some lettuce leaves and you can transfer these
shrimps to the cup I've used a glass, a tall bowl
you can transfer all of them into the bowl.
They are nice and crunchy and I'm adding some chopped spring onions to this they
are moist juicy and crunchy with a flavorful sauce I hope you enjoy
dynamite shrimps at home
