Today we are going to make Lavang latika which is famous sweet in Bengal.
Let see what ingredients we need for lavang latika
Khoya 2 big spoon,1 big spoon sugar with that we have taken 4 Cardamoms seed and made powder,
we can make separate powder for both, few Clove, specially don't remove the flower
of clove, that is the specialty of this sweet, some Raisins and some chopped almond, 1 pinch
salt, sugar 1 small bowl, 1 spoon refined oil, 1 bowl Maida flour, this will be enough
for 4 people.
if you want to increase the quantity, members are more than just double the quantity of
ingredients.
Lets start…..
First we will make sugar syrup in one side of stove, sugar 1 bowl and same quantity of
water, don't cook much just till it becomes sticky.
Till the time sugar syrup is getting ready we will make dough, first add the refined
oil and salt mix well, you can see its binding well, now we will
make normal dough.
keep aside for 10 minutes, sugar syrup is ready, it took 5 minute, take one drop of
sugar syrup in between fingers and check it should be lighter then honey.
Its ready keep it aside switch off the flame.
Take deep frying pan is heated we will take few drops of oil, put 2 cloves, to get the
clove flavor in Khoa roast it little.
Add Khoa along with this add sugar, its fresh Khoa to not required to fry much, keep flame
medium, stuffing is ready we will take it out in a plate and
make it cold, switch of the flame, dough is set now we will apply some oil in hand, one
more time we will prepare the dough, dough is ready keep aside, stuffing is ready we
kept this aside for 15 min you can take Khoa with frying, take direct Khoa add Cardamoms
powder and sugar mix well and use the stuffing.
We have taken 1 spoon maida, we will use this as required.
Lets start making wrapper, we will dust the maida, you can make the puris as you wish
small or big, Oil is getting ready for deep fry the lavang latika, puris should not be
so thick or thin it should be normal, now we will put stuffing take little water in
finger and apply all around the puri, now fold it from one side, now fold it 2nd side,
3rd one on top of 1st and 2nd now final fold on top of 3rd one.
Make sure it should overlap, press little take one clove put
it in middle, its ready, by using same process make all the loving latika,
Oil is heated, put flame in medium, put lavang latika one by one deep fry it for some time.
If sugar syrup is cold then make it little warm, remember lanang latika will get dip
in sugar syrup.
All the lavang latika is deep fried; remember if any lavang latika is broken keep it aside
otherwise it will spoil other lavang latika, lets dip the lavang latika in sugar syrup,
once coating is done we will take out the lavang latika in one plate
We will garnish with raisins and chopped almonds and some clove.
