Hi Everyone - I am AVNI - Welcome back to my channel.

Today we will cook "Dum Aloo"

Dum Aloo is one of the famous Indian dishes and every one likes it.

Lets check out the recipe for this dish..

To start with, I have taken 5-6 regular potatoes and I already boiled them before.

These are regular size potatoes..if you want you can also use baby potatoes.

If you are using regular size potatoes then cut them into two halves and prick them with fork or toothpick ..

we are doing this so that the gravy can go inside these potatoes and make it more yummier..

I am done with pricking all the potatoes I took..

Add 1 teaspoon of red chili powder..

Add 1 teaspoon of turmeric powder

Add 1 teaspoon of salt

Shake and mix it..

If you want you can also use your hands to mix it properly.

Heat the oil in a pan

Add boiled potatoes mixed with spices which we prepared before

Shallow fry them over medium heat until they turn light brown (If you want you can also deep fry them)

Stir continuously, so that potatoes don't stick to the base of the pan.

The moment, you start seeing a golden brown layer on potatoes - you can take out the potatoes form the pan.

fried potatoes will look something like this.

Now again..Heat the oil in a pan

Add a bay-leaf..

Add a cinnamon stick..

Add 1 cardamom and 2 cloves..

Stir it well..

after a minute or so when you start feeling the aroma of spices then add 2-3 small pieces of ginger

Add 3-4 chopped pieces of gingers..

Add 10-12 pieces of cashews...

Stir/Mix it well

these ingredients add creamy texture to the gravy

Add 1/2 roughly chopped onion

Mix / fry it well ..

Cook it until the veggie gets little softer..

After its done.. keep it aside for 3-4 minutes to cool down..

Transfer the mixture to the grinder so that we can prepare a thick paste.

Make sure you don't add water while preparing the paste..

We want to make a thick paste without water..

Now again..Add 2 tablespoon of oil and heat it

Add 1 teaspoon of cumin seeds..

Add 1 teaspoon of "Kashmiri" red chili powder..

Add 1 teaspoon of turmeric powder..

Mix it and add the onion paste we prepared before..

Mix it well..

Add 1/2 cup of water to the same jar in which we prepared the paste, stir it and add it to the pan.

Mix it well..

Now we will add tomato puree..

I already prepared the tomato puree in advance by boiling the tomatoes, removing its skin and grinding.

If you want you can use the ready made puree from market also.

Or ..If you want - you can roughly chop the tomatoes and add it with the onion before and prepare a paste.

The gravy prep is almost done.

After stirring for a 2-3 minutes, we will add a 1 teaspoon of coriander powder..

Add 1 teaspoon of "Garam masala"

Add 1 teaspoon of black pepper powder

Mix it well..

Cover the lid and cook it for 3-4 minutes on low heat.

After 3-4 minutes ..it will look something like this..

As you can see, mixture is all set for the next stage

Add 1 small bowl of yogurt

make sure the stove is set on low heat...

Keep stirring continously

Cover the lid and let it cook for 1 minute

After 1 minute, you can see --- its well cooked!!

color of the gravy and aroma is so good..

Add 1/2 cup of water or as per your need..

If you want thick gravy then add less water..

Now we will add the potato pieces which we prepared earlier and mix it well with gravy.

Add salt as per your taste..

Keep in mind that we already added salt before too

Let it cook for 5 minutes on low heat

After 5 minutes - it will look something like this

Its actually looks great and aroma is good too..

If you finding these potatoes big then you can cut into small halves..

I am garnishing this dish with coriander..

Its ready for serve now

This dish goes well with Chapati, poorie or Naan and it tastes yummy too
