Today I am going to make one of the famous recipes of Gujrat called Undhiyu

Let's see the ingredients required to make this recipe
I have boiled 200 grams of Indian beans
100 grams of pigeon peas
100 grams of green peas with salt and carom seeds
Until the cooker whistles twice
1 medium sized sweet potato
1 medium sized purple yam
10/12 baby potatoes
2 raw bananas
6/7 small brinjals
200 grams of fresh green garlic
1 bowl of fresh green coriander
1 bowl of grated fresh cocount
3 green chillies
2 inches ginger
1 tablespoon of sesame seeds
2 tablespoons of coriander cumin powder
1 tablespoon of red chili powder
1 teaspoon of turmeric powder
1 teaspoon of hot spices
1/2 teaspoon of asafoetida
1 teaspoon of carom seeds
1 tablespoon of sugar
Salt to taste
2 teaspoons of lemon juice
8/10 muthia

Oil and water
To start with fry sweet potatoes
Till it cooks well
Similarly fry purple yam, baby potatoes and raw bananas similarly
Next grind in a mixer jar add fresh garlic, coriander, grated coconut
Sesame seeds, lemon juice and grind well
Add chillies, ginger and grind again
Once mixture is grinded well remove it
In the same paste add coriander cumin powder, red chilli powder, hot spices
Turmeric powder, salt, sugar and mix it well
Stuff this paste into the brinjals
Stuff all brinjals with the paste
Put all fried vegetable in remaining paste and mix well
Next put oil in a pan
Put carom seeds, asafoetida, red chilli powder,water
All boiled peas, stuffed brinjals
Mixed vegetables, muthiya and mix well
Then cover it and cook it for 15 to 20 minutes on a low flame
Hot and tasty Undhiyu is ready to serve
Lets see the ingredients required to make Creamy Spinach Soup
200 grams of spinach
1 onion chopped into small pieces
3 garlic buds chopped into small pieces
1 tablespoon butter
1 teaspoon of salt
1/2 teaspoon of sugar
1/2 teaspoon of black pepper powder
1 teaspoon of corn starch
1 cup of milk
50 grams of fresh cream
2 bay leaves
And water
To start with put butter in a pan
Once butter melts put bay leaves in it
And saute it for 1 minute
Add onions and garlic and saute it for another 2 minutes
Add spinach and cook it for 2 minutes
Remove the bay leaves after sauteing for 2 minutes
And let the mixture cool down
Once it cools down grind the mixture
And make a smooth puree of it
Next in the same pan put the prepared puree
Add salt and milk in it and cook it for 1 minute
Add sugar, black pepper powder and mix it well
Next prepare a slurry of water and cornstarch
Add the slurry in the soup and let it come to a boil
Spinach creamy soup is ready to serve
Let see the ingredients required to make this recipe
6 slices of bread
200 grams of finely chopped spinach
100 grams of boiled corn
100 grams of grated cheese
1 finely chopped onion
8 to 10 finely chopped garlic cloves
1 tablespoon of refined wheat flour
1 teaspoon of oregano and parsley mixture
1/2 teaspoon of chilli flakes
1/2 teaspoon of black pepper powder
2 tablespoons of butter
100 ml of milk
And salt to taste
To start with put butter in a pan
Further add garlic, onion and saute it for 2 minutes
Add spinach, boiled corns and saute again for 2 to 3 minutes
Add refined wheat flour and keep stirring continuously for 2 minutes
Next add milk and stir continuously to avoid lumps
Stir the mixture until it thickens
Add oregano and parsley mixture, chilli flakes
Black pepper powder and mix well
Add cheese and salt and mix well
And cook it for 2 minutes
Stuffing for the sandwich is ready
Next spread the prepared stuffing on bread
Cover wiith the another slice of bread
Similarly prepare more sandwiches
Next put butter in a flat pan
And keep the prepared sandwich on it
And press it lightly and cook it until it becomes crispy and brown on one side
Next spread the butter on upper side of sandwich
And flip the side and repeat the process
Once sandwich become crispy and brown from both the sides remove it
Similarly prepare all sandwiches
Hot and crispy Cheese Corn Spinach Sandwich is ready to serve
