Today we are going to make a famous snack from Rajasthan

If we compare this vada with different vada's then frying of this kalmi vada is totally different then others

Here we have soaked chickpea for last 3 hours and later drained the water

Easily by pressing between fingers we are able to break it

Now transfer the chickpea in mixer jar and add water and make thick paste

Make sure the paste is thick not watery

So the thick paste is ready and we almost used around 1/2 cup of water

So now lets transfer the paste in bowl

Mix everything together properly

again mix it properly

You can add dry mango powder too if you like it

Now mix everything all together properly

So Kalmi Vada mixture is ready

here we would use a plastic sheet like this, now apply little oil on plastic sheet like this

now take a medium portion of kalmi vada and place on the sheet like this

Spread with the fingers and give a circular shape

make sure the thickness is medium

now flip the kami vada on your palms like this

Flame is at medium mode and oil is heated up now add the vada

fry the kalmi vada till it turns to brown in color

So its brown in color lets remove it on plate still its not ready

Similarly fry the rest of the kalmi vada like this and remove it on plate

So we have fried all the vada's but still they are not ready we will fry it again one by one once they cool down

the reason to fry again is that it will increase the crispness and shelf life of the vada

Once the oil is heated add the kalmi vada again one by one and fry it for a minute

After a minute lets remove it on plate

So famous and crispy vada from rajasthan is ready
