Sashimi and Sushi in Okinawa is very tasty!

There are many types of fish you don't really get to see in Tokyo.

Be sure to go to the fish market.

The market? - They have a variety of fish there

It's a lot of fun to go there and they all look tasty!

Okay the fish auction has started now! Wow.

Many of you might know about the famous fish markets, for example Tsukiji Fish market

If you come to Okinawa you need to go and see one of the fish markets here

Because the fish are so colorful, because obviously tropical region.

You get to see very different types of fish and have a real glimpse into Japanese culture

The Fishermen have brought in the fish and they look so different

from what you'd be able to see in Tokyo

We will have a look around and see what exciting and tropical fish we can find here.

If you come here early in the morning you'll be able to see another spectacle

and that's right here. The fish auction is gonna start soon.

Restaurant and shop owners from the local regions

are coming here to bid for the fish they like so

the fresh fish that you see here will be fresh on the plate in a few minutes

in some kind of restaurants and other places

So let's check that out.

Okay the fish auction has started now and it's already quite passionate

It goes really quickly as well.

They announce the prices and who gets the fish gets to take it home.

It's very cool to see everyone so passionately bid for it.

Once they get the fish you can see that they put a paper on top.

The paper displays the amount that it's sold for and it also has a symbol

which symbolizes which place it goes for. Might be a restaurant, might be a shop.

So they put that on top of the fish

So you can see where it goes to afterwards and who needs to pay up for it.

It goes so quickly as well.

There are different ways of catching fish. For example via a net

or a spear and you just stab the fish.

If you stab the fish in the right place it will not disturb the pattern of the fish.

The fish will still look pretty which means the price is higher

than one that got stabbed in the side and you can see that it's wounded on the side

That apparently also decided how much the fish can go for in the end.

The red fish here in the middle is apparently quite rare so I wonder...

how much that will go for. Quite a lot of people have been eyeing that red fish before.

You could see that was a fierce battle for the best and freshest fish.

except for maybe in an aquarium.

You can actually go and try these ones here (in Okinawa) and again

So these ones are gonna go and get onto the plate as quickly as possible

So they taste the freshest and the best.

It hasn't even been five minutes since the auction ended

but already all the fish are gone

The restaurant owners and other people have collected the fish and brought them

out so they can get served as freshly as possible.

If you actually live in Singapore or in Thailand, you might have the pleasure

to eat Okinawan fish because some of the fish here are gonna get packed up

cooled and get send to those countries.

So you might be lucky and have fresh Okinawan fish on your plate.

I am the reginal president and CEO of Kizasu, my name it Goto Daisuke.

So what do you do at Kizatsu?

Kizatsu is a company of Okinawa.

We work with Singapore, Taiwan and Thailand

and we send them our fresh fish from Okinawa.

So you ship the fish as freshly as possible.

We get lots of foreign visitors here in Okinawa,

How about okinawan fish for foreigners?

The fish here in Okinawa, some people in mainland Japan even don't know.

People from Asian countries however, might have seen some.

and we make it possible for them to enjoy these.

We also fish them differently here. We don't grab them all in a big net.

we fish them out carefully one by one.

That's a generally used technique here.

Also some dive and catch them that way.

We don't fish in large amount, but we fish for quality.

Another thing to preserve the quality of the fish,

we will put it on soft sponge mats on the boats.

And then draw the fish there.

And that's how we keep the freshness of the fish.

So the way you fish is also different from mainland Japan.

Yes it is.

There are more planes that come from out into Okinawa these days

as well, so if you come to Okinawa, be sure to try some of the really fresh fish here.

It looks really good and it tastes really good.

What I find really interesting to see is how

they value freshness so much over everything

Like I said, it's already gone. People washed the fish and took it straight out.

So maybe you might be eating that soon.

It's always quite like this.

Everyone is really focused.

I heard depending on where you stab the fish, the price changes?

You mean the fish?

Depending on where you stab the fish, the blood will flow.

If you stab it right, the color of the meat will be more beautiful.

For example it will stay all pure white.

Yeah it's pretty much really like this.

We do allow normal visitors to view the spectacle.

time wise, we also start at 8,

while other fish markets start at 5 in the morning.

Oh early.

Once that market is over, we start our fish market here.

We do it in a different style.

What's special to our fish market is...

We specialize in deep sea fish.

They are super fresh.

The fish that have just been caught will be here in the morning.

I think their quality is really good.

Can foreigners and tourists come and view the auction too?

What's different between fish in Tokyo and in Okinawa?

The fish of Tokyo, or generally mainland Japan...

have been fished from colder waters. In Okinawa they are warm water fish.

For people in the main island of japan hardly see those tropical fish there.

They have a different coloring, do they also taste differently?

They are said to be less fatty than other fish.

Good for the female waistline.

They said in recent studies, the protein and fat of fish are good for health.

In winter, there are many fatty fish in okinawa and they are very tasty.

Are there some fish you can ONLY get in Okinawa?

Ao-budai is a fish you can only get here in Okinawa is what I think.

Is the Ao-budai the blue fish I saw? - Exactly.

The big blue one with the ridge at the head. That's the Aobudai.

There was also a red fish, if you saw it.

It's called Sujiara and a very high grade fish of Okinawa.

Everyone was really eager to get it into their hands.

Today there was only one so everyone was passionate about it

and it sold for a good price.

The tuna left to it was three times as big but still made less

The red one was a lot more pricey.

Tuna is easier to catch.

Sujiwara you can't really catch in large amounts.

It has a nice amount of fats in the meat.

It's very popular.

In Okinawa we have a special way to eat fish too.

We eat fish differently compared to mainland Japan.

We add a Miso flavor taste to it.

Or add it to miso soup.

In Miso soup?

We use the fish flavor in Miso soup or

or pickle it with salt.

Those are some ways of eating them.

I must say I was very glad I got to see the auction.

Usually with other fish markets you can visit the market,

But you can't see the auction. Here if you stay on the side, you're allowed

to see the auction. I think that's the highlight of actually seeing a fish market

how everyone is bidding for the best and freshest fish.

What I find very interesting is that the colors here are different.

And the people are super friendly. People same up said hey you look cute

what are you doing here?" So everyone is very friendly.

That's your chance, when you come to Naha, to see one of the fish markets.

Also, they might be doing a tour to come to the fish market here

So that's your chance to actually see live a real part of Japanese culture

that you generally can't actually see at other fish markets.

While other fish markets start in the very early morning hours,

so you can't actually get there,

this auction here started around 8AM

Even if you wanna sleep a little bit longer you'll still manage to get

to actually see the real auction happening here.
