After January first most people are back at work here.
It's a little different from Japan.

Beat the egg whites until foamy (do not reach soft peaks)
Mix the sifted flour, sugar and extracts
Add water only until the dough is more fluid - it may not be necessary to use all the water. Let the dough stand for 5 minutes.
On the silicon mat lightly greased with oil pour one tablespoon of dough on each side, apart from each other
smooth in a circular motion
until it has a diameter of about 10 cm/ 4 inches
The dough should be very thin, almost transparent
Bake for 6 minutes at 200ºC/390º F or until the edges are slightly golden
While the biscuits are in the oven, prepare a second tray the same way
When it is baked quickly remove it from the mat with a spatula
turn it upside down, place the paper strip in the middle
fold it in half, holding the ends, not the base
and press the pointed edges down over the rim of a mug
You have to be fast while the cookie is warm
Place the folded cookies into the cups of a muffin tin to hold their shape until firm
Quickly fold the second cookie, before it cools down
In total, to fold the two cookies you will have about 30 seconds
Repeat the process until there's no more dough

Rice Cookies (gluten free)
In the food processor - rice flour
Cornstarch
butter
sugar
baking powder
baking soda
table salt
Mix very well
when throughly mixed
add one egg at a time (just one in crunchy version)
adding the second one (in soft version) when the previous one is absorbed
the dough is soft and doesn't stick
add the extract (I used almond)
mix
transfer to a bowl
smooth the top and chill for 30 minutes
roll the dough in small balls and place them over ungreased parchment paper or a silicone mat
bake at 180ºC /350º F for 15 to 20 minutes
until lightly golden and crinkly on top
store after they are completely cool
