Hello Friends, Welcome to the Masala Kitchen

Today we are going to make South Indian Special Meduvada

Soak a small bowl of Urad dal for 4-5 hrs and grind it smoothly by adding little water in it.

You can see the Urad dal is grinded thickly and smoothly

Now we have to follow some tricks to make the Meduvada spongy inside and crispy outside

First put some water in the Asafoetida and soak it for sometime and then add it in the mixture

Now add some finely grated Ginger and Green Chilies

Add some Curry leaves like this for flavor

Add some Coriander leaves

Add 1/2 tbsp Cumin

Add some Fennel seeds and add some coriander seeds

And add few red chilly flakes

Now add some salt as per your taste

Now take a spoon and whisk it properly in one direction for making it soft

Whisk it for 2-3 mins like this

Now add 2-2.5 tbsp Rice flour simultaneously like this and whisk it

If you don't have the rice flour then you can add some rice with the Urad dal during soaking it and it will get grind along with it

Now we will check the dal is whisked properly or not by putting it in the water like this

And you can see it is floating on the water it means it is whisked properly

Take a bowl and cover it by a thin wet cloth like this for giving the proper shape

Put oil in the pan and keep it on the medium flame

Now wet your hands like this and put some water on the cloth as well

Now take a portion of the mixture and put it on the cloth like this and make the finger wet and give it a shape like this

Again repeat the same process and fry it in the oil like this

Fry the Vadas on medium flame properly

Rice flour makes it crispy from outside and Asafoetida makes it soft and spongy from inside

When you see the Vadas are cooked properly like this then keep it on the paper napkin and turn the flame slow

Now I will show you how to make it by your hands

For this as well, we have to make our hands wet

Take the mixture in your hands like this and use finger for giving the shape and then fry it

Repeat the process again

For the beginners the first method is best

You can see it is so crispy from outside and soft and spongy from inside.

indian classical music.

He is an admirer of improvisation music.

I suggested him to join me in

Music is always

some kind of

cosmic thing.

But when it's an improvisation format

it's a big happiness to the musicians.

Tha's why Pianagi is one of the most

favourite formats.

Especially for me!

Cause it's an opportunity to express

the whole range of my feelings and emotions in music.

And to demonstrate all of my vocal skills

and experience.

Raga is an improvisation music.

And it's full of spiritual meaning as well.

I hope everything will be fine
