There are two ways to describe what is happening.

The first way is, "He is zipping up his jacket."

The second way is, "He is fastening his jacket."

Alright, "zip" means to close something using a zipper, like this.

"Fasten" means to close something, using a zipper, a button, a belt, or even a strap,

or anything else.

The second way is, "He is unzipping his jacket."

The final way is, "He is unfastening his jacket."

Alright, so these are the opposites of the first expressions.
