The Master of Masa Dishes Up Oaxacan Staples || Eat Seeker - Duration: 6:00.

- For me, in Oaxaca, it's been a 12-, 13-year

love affair that just keeps growing stronger.

What I'm doing here comes from the way I cook

through my upbringing being an Italian-American,

and it was super-exciting to see a lot of similarities

between Italian food and Oaxacan food.

For me the parallels, once the door opened, it didn't close.

Oaxacan cuisine, to me, almost isn't even Mexican cuisine.

Once I got closer to it,

I realized how many subcultures were

going on down there that food is everything,

super-delicate and gentle and simple,

and it's also very complex and fierce and bold.

That, to me, is really beautiful, and as a chef,

what I'm doing is really just sharing experiences and

memories that I've picked up down there,

and that's something that I think is really sincere.

(crackling flames)

When we first found this place,

the thing that attracted to me

about it the most was this grill.

All the places that I love to eat in Oaxaca

are usually on the street, maybe sitting on a milk crate.

It's always based around the comal,

which is a big, flat red clay-topped disk kind of

with an earthen hearth underneath,

and it's fueled by wood; and that, to me,

is the heart of Oaxacan cuisine.

The comal is also great because the size that we have

allows us to make tlayudas, which are basically

giant over-sized tortillas that we start on the comal

and set them kind of like you would a tortilla,

and then they move over to the grill that we have next to it.

And from there, we can fold them on the grill

with stuff inside them kind of like

you would see people doing with a quesadilla.

In Oaxaca, most of the meats are cut very thin.

Here, just to appeal to a little bit more of

American palate, we're doing a steak that's cooked about

medium-rare and then sliced and added to the tlayuda.

That's the one thing that I'd say isn't so classic Oaxacan.

You get those smoky notes.

You get some caramelization or carbon parts on it,

and it gets really crunchy on parts, and that,

I think, is really fun textural contrast.

The things that you can put inside are endless,

but it's the comal that allows us to make

these big tlayudas that I don't think anyone else

in New York is making here or can make.

As far as Mexican, or even more so Oaxacan cuisine,

memelas are basically my favorite thing

to eat for breakfast down there.

Every morning that I'm there, it's what I have,

and it's kind of like a tortilla or a taco where

you can put whatever you want in it,

but it's also kind of like a sope where it has

pinched-up edges.

These edges that you're giving it and

some little dents in the middle --

almost like an English muffin --

allow it to hold the sauce that you want to put on it,

so it's creating all these pools of pork fat

or salsa or cheese or whatever it is,

but it's a great place for flavor to get trapped.

A very typical one that you would see at most street stalls

is with chorizo and potato.

So that's one of the ones we do here at Claro.

At the end, you add a little bit of potato.

It sucks up some of the juices and the fat,

and that's what we top our memela with.

Chochoyotes are another fun thing that have a

special place in my heart being an Italian-American and

feeling so close to pasta and gnocchi that

all of a sudden I realize that there was

a dumpling made from masa as well and I was like, "What?"

That, for me, has been something fun to play with here

where traditionally there, you would often see them

in a lot of soups and stuff, and we've done that,

but I've had a lot of fun getting away from that

and treating it like a pasta and browning them in butter,

searing them off and adding wild mushrooms and meats

and, you know, stocks and sauces that you would often see in,

maybe a different Italian application and

just really having fun with it.

Later in life I became gluten-intolerant,

and I had this big hole in my heart for pasta

that needed to be filled by something.

Masa was there for me.

Growing up with having all these Italian-style braises

and stews that you would put all of this love into,

and then pasta would be the vehicle for that.

Now all of a sudden, masa was doing the same thing.

From a chef's point of view, here in New York,

everything is so modern, and you can order something

from your phone to have any kind of food you want

at your doorstep at any second.

But, to step away from that and get back to

actually like land where people are growing food

and so connected to it, and the food that they cook

is what they have and what they make with it is

so amazing that I feel honored to go down there

and see that and bring it back here to my food

and have the same respect with it here.

I think that the food culture is really deep

in all of Mexico, but in Oaxaca,

it was a little more apparent.

This is something really special and something that

I've never seen before and it took me by surprise

that there was so much going on,

so many flavors and so many things that I'd

never seen before that it was kind of immediately addicting.

I needed to get more information.

I needed to see more.

I needed to eat more and that's kind of how it all started

and I've been addicted ever since.

The next month of the transformation process is behind us.

A huge wave of energy reached the Earth, what for many people turned out to be very �uncomfortable�

as it pushed us to look deeper into ourselves, and to face our deeply rooted fears and ego

programs.

In the Universe everything do happen for a reason � even these seemingly unpleasant

and difficult experiences.

They are triggers that give us an opportunity to deepen self-knowledge, and then to be able

to start creating our lives in full harmony with the highest good of the Soul.

There is a lot going on.

In addition to the physical symptoms of the ascension process which I described some time

ago, each of us, conscious participants of the process, could experience a decisive increase

in their multidimensional abilities associated with the upper chakras, which were regularly

stimulated by the literally warping pulse of the Earth.

There were numerous insights, broaden awareness, and seeing the sense of the past experiences.

What can we expect in April and May?

Below you will find a few topics that will be particularly important during your multidimensional

journey in the coming weeks.

ACCELERATED MANIFESTATIONS The more advanced the stage of your awakening

process, the greater is your power.

The greater the power, the greater the responsibility.

That is why in the coming weeks and months you will be able to see more and more clearly

how much what you have within has an enormous impact on your awakening process.

If in March you gave in to the process and took the time to reach the deep layers of

With time and practice, you will see that you can take another step and reach the perspective

of Bob�s observer, because even though he already has the opportunity to see your patterns

and look at them without unnecessary emotions, he also has his limitations and schemes.

In conclusion, there is you, Bob and Bob�s observer.

I am writing about three people, but remember that all the time I am talking about the very

same being.

To integrate these different levels of yourself is a part of your mission here on the Earth.

This is multidimensional development.

The universe is a living organism that is growing all the time, so I have no doubts

regarding that.

TRANSFORMATION OF OLD PATTERNS / EMBODYING YOUR HIGHER SELF ON EARTH

It is a beautiful, hot summer day, and you are sitting in a cafe waiting for your friends,

slowly sipping your favorite coffee.

You know that you have some important things to discuss with them.

It is quite crowded, there are no seats at the tables, and people more and more people

come to the cafe.

You have a 4-person table yourself, so at some point some people ask if they can sit

up.

You have an appointment, but as your companions are late, you agree.

You just mention that you will have a meeting here shortly.

After some time, you can see familiar faces in the crowd.

What do you do?

Will you continue to sit with the strangers, or apologize them politely reminding that

these places were reserved by you?

�Casual guests� of a cafe are all the patterns and schemes you have acquired, you

could even like them, got used to them, learned something interesting from them while chatting

to pass the time.

�Friends� are the higher aspects of you, and you did not come to the cafe to meet new

people, but to discuss important issues with your loved ones.

April and May energies will be very conducive to start making space for what you care about

the most, i.e. the true and authentic YOU, in a polite, loving and understanding way.

Old patterns have given you the opportunity to see how you do not want to be.

NOW, however, it is the time to stop pushing your elbows with strangers and invite those

who you care about the most to your table!

Every time it is no one else but you who need to make a decision.

TIME OF MAKING A CHOICE AND STARTING A NEW JOURNEY

Seemingly you are comfortable, you have each day planned ahead, another vacation, perhaps

even the prospect of a raise or promotion at work.

Inside, however, you feel that life is about much more than standing still and playing

it safe all the time, according to the once adopted scheme, based only on building a sense

of security.

Of course, it is very important, but when it starts to eclipse the whole world, it becomes

a limiting factor.

The energies reaching the Earth from the center of the galaxy will increasingly force you

to leave your comfort zone, so that you can continue to grow and get to know yourself

even better.

This will apply to all aspects of your life, so do not be surprised if the work, relationship,

or environment in which you have stayed until now suddenly stops resonating with you.

Life is a river that flows all the time.

Obstacles that it encounters on its way only lead to a blurring of the smooth surface of

water.

How Did We Get the 8-hour Work Day? - Duration: 8:18.

Hey Folks,

The standard 9 to 5 workday is ingrained deep in our society.

That being said, the 8 hour work day seems to be slowly morphing into the 9 or 10 or

if you count cell phones endless workday.

So for International Workers day, let's talk about the 8 hour work day, the people

who fought for it, and where it is and should be going.

Hi, I'm Tristan Johnson, and this is Step Back History.

Be sure to click the subscribe button as well as the bell notification to never miss a new

Step Back video or live stream.

The first record of hours worked by workers every week came out in 1890.

Full-time employees in that year worked an average of 100 hours, typically six or seven

days a week.

That makes the average workday about 16 to 17 hours a day.

I don't know about you, but that sounds like the epitome of misery, especially considering

at this time factories were noisy, hot, and dangerous.

Oh, and some were kids.

And this was not for lack of effort.

In fact, the struggle for fewer hours goes back as far as capitalism itself.

In America, even enslaved peoples negotiated with their owners over hours of work per day.

As early as 1817, we had workers arguing for 8 hours work, 8 hours of sleep, and 8 hours

of recreation.

This idea didn't catch on in Europe, but it did get some traction in America, especially

after the US Civil War.

In 1866 the National Labor Union formally asked Congress to mandate an 8 hour work day.

Congress refused, but from then on, the battle work day was on.

One of the first flashpoints was in Chicago.

Workers exhausted from working 12 to 14 hours a day six days a week asked the Illinois government

to give them the 8 hour work day.

Illinois compiled, but with a massive loophole where a worker could independently contract

for longer hours.

In an age where a boss could fire someone for no reason, this protection did nothing.

Or, even worse, it made the appearance of doing something while doing nothing.

Obamacare A massive strike broke out in Chicago but

spread to other states.

The movement was eventually able to convince President Grant to mandate an 8 hour work

day without docking pay… for government workers.

See my last paragraph for its effectiveness.

This galvanised labour movements, unions, socialists, anarchists, and anyone else not

stuck in the bubble of classical liberalism dominating the upper crust of the time.

They would strike, and they would protest to get time off.

Their protests were sometimes met with scabs, workers brought in to cover for the strikers.

Fairly often, the owners of the businesses hire goons to beat up the strikers.

Just read up on organisations like the Pinkertons to learn more.

Battles for the eight-hour workday led to incidents like the Haymarket Massacre.

On May 4th, 1889, a group of labour activists protested for the 8 hour work day and in opposition

to the murder of several workers the day before by police officers.

As the police attempted to disperse the crowd, someone threw a stick of dynamite at the officers.

The explosion killed several civilians as well as about seven police.

Eight anarchists were arrested in connection with the attacks, and even though late investigations

showed none of these people were involved with the bombing, seven of them were sentenced

to death, and one to fifteen years in prison.

This event is in American classrooms treated as a minor incident, but it was a pivotal

moment for the labour movement around the world.

News of the Haymarket massacre spanned the globe, and in solidarity with those executed

by the state, the day after, May 5th became known as International Workers Day.

It still is in much of the world, hence the timing of this video release.

It wasn't all doom and gloom, however!

There were some victories in these days.

In 1898 the United Mine Workers won their 8 hour day, as did much of the printing industry

in 1905.

Even some manufacturers in the automotive sector decided to make this alliance rather

than go to war with the unions.

Henry Ford, the founder of Ford motors, implemented a 40 hour work week, and negotiations at General

motors even saw some improvements.

The growing political power of unions would only make some real lasting change when the

classical liberal world order collapsed.

In the late 20s, the world experienced a massive economic collapse, and no amount of free markets

could make it come back.

Trust me, they tried.

This pressure led to massive pieces of legislation like the 1938 Fair labour standards act, which

limited the work week to 44 hours, and then 40 hours by 1940.

The story of the 40-hour workday was different in other countries.

Britain passed a limit on work to 10 hours a day for women and children in 1847.

How generous.

Australia with a severe labour shortage had powerful unions.

The Aussies used it to get 40-hour workweeks for tradespeople in the 1850s.

Most of Europe moved to 48 hour work weeks in the 1920s.

France got the first 40-hour workweek in 1936.

Australia in 1948, Canada in the early 60s, and most of Europe by the 70s.

The Germans even organised a massive strike in 1978 and lobbied for a 35 hour work week.

They settled on a 37.5 hour work week, which is pretty impressive.

However, classical liberalism began to creep back into the zeitgeist, otherwise known as

Neoliberalism.

In the world, but in the US especially unions have spent the last 4 decades losing their

political power, and it has had consequences on this centuries long-fought victory.

Now the average American works about 44 hours a week, and that number is going up.

And that's if there's even a job for you.

A 2014 Gallup poll puts the number as high as 47 hours a week, with many saying 50 hours

a week is normal.

Bloomberg highlighted a few factories in America where the standard is 12 hour days, six to

seven days a week.

Professionals report working as much as 60 hours a week, with the constant stream of

work that comes with having your smartphone on you.

And this isn't even mentioning the insane hours imposed on undocumented workers.

Today we also see a decline in wage work, and an increase in contract work, which has

the beautiful mix of low pay, no benefits, no overtime, and you could have your contract

not renewed, meaning you better not complain about it!

Some companies like Uber use contract workers exclusively, with a recent study showing they

effectively make about $4 an hour.

By the way, this is all happening in defiance of evidence about how we work.

Many recent psychological studies show focused work is way more precious than we think, and

after about 3 blocks of 50 minute to one-hour chunks of work, our efficiency begins to nosedive.

Google opposes repeal of Clean Power Plan - Duration: 0:54.

Google has filed a comment with the Environmental Protection Agency in support of Obama-era

clean-power rules.

In October, head of the EPA Scott Pruitt said he might completely roll back the Clean Power

Plan, which is currently on hold.

The plan would require states to reduce their carbon emissions and the government to offer

states incentives for investments in renewable energy.

Environmental groups denounced the decision, saying repealing the plan threatens public

health and the environment.

But critics argued the rules are federal overreach and hurt coal jobs.

Now, Pruitt and the administration say repealing the plan will "facilitate the development

of U.S. energy resources."

Google told "The Verge" it thinks the Clean Power Plan will encourage states and businesses

to invest in renewable energy.

Google isn't the only company opposing the rule change; Apple filed a comment with the

EPA earlier in April.

Former McDonald's General Counsel Shelby Yastrow Talks About His Career - Duration: 4:00.

Hi, I'm Shelby Yastrow, co-author with Tony Jacklin of the novel "Bad Lies." My

professional career consisted of practicing law. I went from a small town

called Kewanee, Illinois, to Northwestern University. I graduated from Law School

in 1959, and when I went to work in a kind of a silk-stocking big law firm in

Chicago--big by standards in those days--a fella walked in off the street without

an appointment, wanting a lawyer, and his name was Ray Kroc and he came up with

the idea of starting a 15 cent hamburger chain and it turned out to be McDonald's.

So in a way I was in the ground floor and he offered me a job in 1962, which in

my wisdom I turned down because I didn't think he'd ever be a success. And then in

1978, Ray contacted me, he asked if I'd ever regretted turning him down back in

1962. By now McDonald's was a global company on the New York Stock Exchange, a

Dow 30 company, and I said I've regretted it every day of my life and he said well

then why don't you drag yourself down here and come to work for me. You know, Ray was one

of the most famous businessmen in America, in those years, and in fact I

think Congress named him as the entrepreneur of the century. But I never

looked back, it was a good move for me and my family, but it was more important

than than the professional side of it, it was

just a lot of fun working for a place like that. We didn't have the kind of

personal injuries that people died or became disabled permanently so our

litigation was, we had some anti-trust cases, terminating franchises, real estate

disputes, tax issues, until the fateful morning in the 90s when Stella Liebeck

won a 3.8 million dollar jury verdict against McDonald's, I learned about it as

I was driving my car. So Stella had spilled the hot coffee on her lap, had

severe burns, and the jury awarded her, I don't know, 3.8 million dollars, something

like that, which was inexplicable. In the long run, it probably helped us. In the

short run, it was a disaster because in the next few months we had 800 cases

filed against us for hot coffee. For some time I was looking for a story that I

could combine my knowledge of law with my love of golf and lo and behold I

came up with what I thought was a pretty good story, I had the structure of it, and

then after I met Tony a year and a half ago or longer, it started to breathe some

life and it's a story of a superstar professional golfer who was at the top of

his game, winning everything, until his world fell apart when a popular magazine

wrote stories that were repeated in television and newspapers implying that

he was a cheater. And I try to bring in, from my background, scenes from corporate and

executive offices, the sponsors, what do they do with this guy who's allegedly a

cheater and a drug user and

what do the editors of the magazine, the defendants, how are they dealing with

these problems. I think we were right to make sure that we explained enough about

law and enough about professional golf that the reader who didn't know either

knew enough to fit the pieces together in this mystery kind of a novel, whodunit

or why did he do it kind of a thing.

you even need color the second thing I got is the EOS

evolution of smooth sensitive skin shaving cream I'm actually excited for

this I'm excited to read the ingredients to you because I do have sensitive skin

all around that I have sensitive skin so this end is made of aloe and wild oat I

love oh anything lavender butter no added fragrance oh

that's good no Ida fragrance it has a EDTA which I

don't think it's the best but otherwise I'm looking at the ingredients I'm sure

when he took a peek at these ingredients because I was so excited to get a

shaving cream because I always don't you always be shaving cream in your life so

I looked at all the ingredients and they were really clean so I am happy about

that you know there are a few things that are besides one ingredient in here

make it - I'm pretty happy with this it has water it has alcohol it has shea

butter has cacao butter cucumber oil oat macadamia aloe superfoods excited to use

this and I will let you know how it works so this is a full-size thing the

shampoo and conditioner were two little pageant that might last to use a speech

but that was a bowl type thing so I'm super happy about that worth the hype

mascara from NYX is next and I already took a peek at these ingredients

- it's not the best and it's not the cleanest ingredients as BHT EDTA two

different types of the EDTA but it does have beeswax it does have cocoa bottle

so it's not the worst but it does have some non clean ingredients in there

I suggest you know if you have a mascara to swap it out for beautycounter

volumizing mascara I do feel really passionately just one thing at a time

write down what you want to swap out it is called Korres

pomegranate age AIDS and enzymes resurfacing us I do believe in any J's

but only if it's made from fruits and I haven't looked too carefully this has

boba alcohol water glycolic I say that might be a little too strong in my skin

kaolin rice bran well oh the bad thing is that it has perfume and has fragrance

and it's not from essential oils it is synthetic so I'm not the hugest fan of

this but I'm still going to give it a try and I'll let you know how it goes

you know what I think so those are the four things that I receive the box is
